Tasting Notes

The color of dew touched rubies . Delicately youthful and sleek with aromatics of strawberry jam, cherry, tobacco and spice. A warm, spicy mouth feel on the entrance, with flavors of fresh Cherry, strawberry, anise and hints of cocoa. Pleasantly soft tannins with a light-stepping bright finish

Winemaker's Notes

Grapes sorted, de-stemmed, and re-sorted. Whole Berries are cold soaked for ten days, with native wild yeast taking over the primary fermentation. Three weeks of extended maceration , with gentle punch-downs to preserve flavors and aromatics.
